You know those phases of life, the ones where you feel like you are so busy you can't see straight?? That is where I'm finding myself, in a season of busyness.
I haven't had the chance to play in the kitchen much, and don't tell my family that I'm openly admitting this, but when momma doesn't let loose with her creative talent in the kitchen she gets cranky.
I didn't realize just how much I depended on baking as therapy, so to speak. It's as necessary to me as taking a shower and putting on deodorant. If I don't get to experiment in the kitchen my personality downright stinks. 😉
Yesterday I finally got the chance to play with this Paleo Chocolate Zucchini Bread recipe I've been working on.
My Paleo Chocolate Zucchini Bread is more cake-like instead of bread-like, it's very moist. The coconut sugar combined with NuNatural's Liquid Stevia forms the perfect sweet balance, it does not scream, "I'm sweetened with stevia!" The combination of two sweeteners works very well, and believe me, if it didn't, my husband and children would let me know! 😉
Everyone is in agreement that this is a winning recipe. Try serving it topped with a dollop of coconut whipped cream, sliced strawberries, and a light dusting of cocoa powder for a decadent better-for-you dessert.

Hi Michelle, thank you! I actually don't care for most stevias, but the NuNatural's Liquid stevia is one I've had great success with. I try to use it whenever I can. 😉

I made this for my son who has been tested and has Celiac Disease and Diverticulitis and so far this is the only bread cake like gluten free he has even said I like this. So great recipe.. Do you have one for bread I use for sandwiches? So far the store bought gluten free breads in his words are gross lol.

Try her Millet Oat Bread. It's our favorite. Looks, feels, and tastes like real bread! You don't have to toast it before you eat it, which is saying something in the world of GF bread. 🙂

i have a question, on your paleo chocolate zucchini bread recipe it calls for "NuNatural liquid vanilla stevia" what is that, what is it for, and if its artificial sweetner, can the coconut sugar be replaced for it? also do you make your own coconut sugar? if so how, and if not ....where is the best place to get some?

Hi Lisa,
NuNatural's Liquid Vanilla Stevia is basically stevia in liquid form. I'm very picky about the ingredients I use, and don't care for anything artificial. I think the NuNatural's brand of stevia (particularly the liquid variation) is fairly pure. I haven't tried making an all coconut sugar sweetened loaf, but I think it'd work out just fine. Try using 3/4 cup of coconut sugar and omit the stevia. I order my coconut sugar online from Amazon.

Hi Lora, you can up the coconut sugar amount to 3/4 cup. I haven't made it that way, but I bet it will work just fine. 😉
