How To Make These Easy No Bake Cookies:
- In a large mixing bowl, combine the unsweetened shredded coconut, blanched almond flour, maple syrup, melted coconut oil, coconut sugar, vanilla extract, and sea salt.
- Mix well with a large, sturdy spoon.
- Use a cookie scoop, about the size of a heaping tablespoon, to portion the dough into balls. Use your hands to gently fix any cracks, and keep contact with the dough to a minimum. The dough will become stickier the longer it's handled.
- Place in an air-tight container and refrigerate until ready to consume. Serve cold or at room temperature.
Recipe Tips: Caramel Sea Salt Cookies
- Finely ground-blanched almond flour is ideal for this recipe. Almond flour that is not blanched is coarse since it's made from almonds that still have their skin, resulting in a less smooth consistency.
- Use real vanilla extract, not imitation. Real vanilla extract offers such a rich finish. It definitely gives these caramel coconut cookies a little hint of something "extra."
- Utilize a cookie scoop to form the cookies into the perfect round balls.

- 2 tablespoons maple syrup
- 4 teaspoons coconut oil, melted

- ½ teaspoon vanilla extract
- ⅛ teaspoon sea salt
