I don't know about your kids, but mine sure are taken with emojis (and they don't even own phones!). Emoji socks, emoji pillows, emoji crafts, etc... anything with an emoji these days is gold.
My youngest daughter is celebrating her 8th birthday, so I thought I would make her something memorable - Gluten Free "Poopcakes" Poop Emoji Cupcakes. You should have heard the giggles coming from my daughters and their friend! Never has poop been cuter (or tasty!) in the eyes of a bunch of young girls!
But while these fun cupcakes mimic something entirely non-appetizing, I assure you, they really are chocolaty and delicious! They are hard to resist!
To the frosting I add a teaspoon of Starbuck's Via Columbia Instant Coffee. While this is totally optional, I highly recommend it. The coffee flavor compliments and highlights the chocolate so well, just wait until you taste it! It's divine. 😉
As for Starbuck's Via vs. another brand of instant powdered espresso, I prefer the Starbuck's Via. It has excellent robust coffee flavor. I'm not a huge Starbuck's fan, but when it comes to their instant espresso, they do a good job.

Gluten Free "Poopcakes" Poop Emoji Cupcakes
These Gluten Free “Poopcakes” Poop Emoji Cupcakes are a fun and delicious take on the poop emoji icon. They will be a hit at your next party and will most likely spark some silly conversations!
Ingredients
For the chocolate cupcakes:
- 1 cup sorghum flour
- ½ cup brown rice flour or millet flour
- ½ cup tapioca starch
- ½ cup cocoa powder
- 2 teaspoons psyllium husk powder
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- 1 cup vegan butter, softened (or palm shortening]
- ¾ cup organic cane sugar
- 1 cup unsweetened applesauce
- 1 ½ teaspoons apple cider vinegar
- 1 teaspoon vanilla extract
- ¾ cup coffee, cooled (or water)
- 2 eggs
- Enjoy Life Mini Chocolate Chips]
For the Poop Emoji chocolate frosting:
- ¾ cup palm shortening
- 1 pound organic powdered sugar
- 6 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- ½ teaspoon Starbucks Via Columbia Instant Coffee
- 4-5 tablespoons dairy-free milk
For the White Frosting for the eyes:
- 2 tablespoons palm shortening
- 1 cup organic powdered sugar
- 2-3 teaspoons dairy-free milk
Instructions
To make the chocolate cupcakes:
- Preheat oven to 350 degrees (F) and line a muffin tin with 20 paper liners.
- In the bowl of an electric mixer, cream together the vegan butter and the organic cane sugar.
- Add the unsweetened applesauce, apple cider vinegar, vanilla extract, coffee, and eggs, and mix until combined.
- In a large mixing bowl, whisk together the sorghum flour, brown rice flour, tapioca starch, cocoa powder, psyllium husk powder, baking soda, and sea salt.
- Slowly add the flour mixture into the wet ingredients, and stir until just combined. It’s okay if there are a few lumps.
- Divide the batter between the 20 paper-lined tins, filling each about ⅔ full.
- Bake for 15-17 minutes, or until a toothpick, when inserted into the center of a cupcake, comes out mostly clean (a few loose crumbs is okay). Transfer the cupcakes to a wire rack to cool.
- Using a large round frosting tip, pipe the chocolate frosting in a swirl pattern onto the cupcakes.
- To make the eyes, use a small round frosting tip to place two small beads of white frosting onto the chocolate frosting. Place a mini chocolate chip in the middle of the white frosting bead, making sure the flat side of the chocolate chip is on the outside.
To make the Poop Emoji chocolate frosting:
- Place all of the ingredients in a mixing bowl, and whisk until light in fluffy (this will take a few minutes). Stop the mixer and scrape the sides of the bowl as needed.
To make the White Frosting for the eyes:
- Place all of the ingredients in a mixing bowl, and whisk until light in fluffy (this will take a few minutes). Stop the mixer and scrape the sides of the bowl as needed.
Notes
If allergies aren't a concern for you, you could absolutely use these candy eyeballs instead of the method I use above.
